Chef and passionate foodie Valentine Warner returns for a second series of his guide to seasonal cooking and eating, and this time he has set his greedy sights on the culinary delights of summer. Each week, Val will be taking us through the very best of summer’s ingredients, showing us the food we should be eating now, how it grows and how to cook it.
Valentine unpacks the best ingredients for the perfect picnic. He reveals his top five picnic tips, searches out salad leaves for the ultimate summer salad, ‘bigs up’ the broad bean and bakes the sweetest cake. Don’t waste time and money eating tasteless food flown from thousands of miles away. The best way to eat is to eat food that is in season – it is plentiful, cheap, packed full of flavour and, cooked Valentine’s way, it is always absolutely delicious.

As a Principal EHO I was apalled at Mr Warner whose indiscriminate and extremely dangerous use of raw egg in his recipes in this episode was carried out without a single mention of the risks. Lion brand to which no reference was made, are not Salmonella free but they are less of a risk and for the elderly and the young this is extremely dangeorus and life threatening iresponsibility. We have recently dealt with wedding party which were poisoned by raw eggs and Monmouth recently prosecuted a Hotel for the same offence. Use pasteurised eggs if you have to
Definitely want to try the Egyptian broad bean, beef and rice stew! Where can I find the recipe?!!
Another one hoping for the recipes from last night’s show, esp the beef and rice dish made in the pot.
Julian, my son is allergic to raw egg so that bit caught my attention too. I guess we can only hope that anyone using raw eggs as an ingredient would have the sense to be aware of any dangers.
I don’t really think it’s the responsibility of people presenting or cooking on such programmes to point out the dangers of various foods – it would be of no interest to many viewers and detract from what is essentially an entertainment programme.

The recipes by valentine are on teh BBC web site but not the two by the egiptian lady are not?
Does anyone know the band which plays the music which was played whilst VW was shopping in the market with the Egyptian lady, the first song? I love it and want to buy it!

Broad Bean, Beef & Rice Stew
OK I’m so desperate for this recipe I just watched it back on BBC I Player! So this is a bit rough… but should give you enough details to cook this dish.
1/2kilo beef, cubed
1 onion diced
large bunch of fresh dill & coriander, chopped
broadbeans, shelled (lots!)
12 (!!!) cloves of garlic, crushed
*’char’ (no idea what this is – looks like cabbage – anyone help?)
basmatic rice
brown beef, add onion, dill & coriander
dry fry garlic and char (?)
add to pot with broadbeans & 3 tbsp basmatic rice (assume some water must be added at this stage)
Cook 10 mins
Serve!!
That’s as much as I could gather from watching – have I missed anything? Anyone know what char is? (may have picked that up wrong)
It’s the vegetable chard, also known as swiss chard I believe.

How can I find the recipe for Honey Cakes (last episode,July 13th.) I cannot find it on the websight. However, I’m not good on computers, being a little long in the tooth!

Honey buns
for buns
150g plain flour
1/2 tsp sea salt
20g caster sug
1 x 7g sachet yeast
3 large eggs
75g diced butter
for syrup
500g caster sugar
4 long strips orange rind
500ml cold water
100g good runny honey
4 tbsp orange liquer
You will have to watch it on IPlayer to get how to do it sorry, in a mad rush…. I have the book “What to eat now MORE PLEASE” £10 WH Smiths! (Doesnt have broad bean thingy in though. Does have the omelette one xx

The recipes are on the BBC recipe search, select What to Eat Now (close to the top) from the find a programme field and click search. Not sure if all the recipes are there.
I was looking for the picnic ideas packed inside the crusty loaf, if anyone can help with that it would be much appreciated.

The chickpea / lentil / broad bean dish is called ‘ful medames’ (‘mudammes’). If you search the web under this name you get a few variations of the recipe. not many have the chick peas but this may be a Hebba twist on the recipe! Note that Fava beans are Broad beans. You have to love the internet!

sorry for being rubbish at replying. Here is the broad bean stew dish. Please don’t hesitate to ask if anything is unclear!
Ful akhdar matbukh bil khudra – broad beans stewed with fresh herbs
1kg broad beans
2 onions
Half cup coriander leaves
Half cup dill
Half kilo beef or lamb (lamb from the shoulder, beef if you like the meat tough, veal is best, it’s just melts in your mouth)
2 tablespoons rice (I sometimes put 3 depending on my mood).
Half cup chard
10-12 garlic cloves (I usually put the full quantity. I love garlic!)
Cooking oil
Salt and pepper
Take the beans out of the pod. Chop onions finely. Chop coriander and dill coarsely. Cut meant into small cubes. Heat cooking oil and fry meat until its juice is absorbed, then ad onions, coriander and dill and fry together for another 5-7 minutes.
Cover with water and bring to a boil, add beans and rice, and cook over a medium-low flame.
Crush garlic with salt and ground coriander. Chop chard very finely and to garlic. Fry this mixture, then mash or pound until very smooth. Add to cooking beans and simmer for 10 – 12 minutes.

Thanks for taking the time to add the recipe to the site. I have just made it and we all enjoyed eating it for tea…very Yummy!.
Just a couple of points that I think would make the recipe easier to understand for novices like me!:
How long should the mixture cook for before you add the crushed garlic and chard mixture?.
Also how much ground corainder should be added to the garlic, as ground coriander is not mentioned in the list of ingredients (I added a teaspoon)?.
How much cooking oil and what type ( I used a table spoon of olive oil)
