Valentine Warner concludes his guide to seasonal cooking and eating by focusing on the very best summer fruits.

Valentine hopes for divine assistance when he makes a heavenly summer pudding for an order of Benedictine nuns, and engages in a battle of the berries to see who should be crowned king – the raspberry or the strawberry. He also celebrates the arrival of the British cherry season with a sumptuous cherry pie and gives us his top tips on how to keep cool using summer’s fruity bounty, including a wonderful recipe for raspberry ripple ice cream.
Using delicious recipes, Valentine shows us how rewarding it is to eat food that is in season and how easy it is to make the best of ingredients that are plentiful, cheap and packed full of flavour.

Hi, I have read through the recipes for the show on the 10th August and the Rasberry Tart recipe given is not the one cooked in the show, that Tart did not contain Peaches. Could you supply me with the one Valentine actually cooked it looked and sounded delicious.

Just made an alternative version of the raspberry, peach and almond tart..
We have brambles running alongside the river in abundance, so blackberry picking was a must!
I swapped Valentine’s fruit choices for Blackberry and Apple and used homemade blackberry jam in place of the raspberry jam.
I excluded the eggs from my pastry too, adding a little more water in their place, otherwise sticking to the remainder of the recipe.
The tarts were a joy to make and the velvety consistency of the almond frangipane mix was a sight to watch in the oven turn from a pale paste to a glorious golden baked tart.
Once removed from the oven, the wait was now upon us. Both of us enjoying the sweet smell. Once cooled enough and ready to eat still warm, we tucked in and had a second helping immediately. We could have ate the whole tart, but thought that would just be greedy! So, we saved some for sunday afternoon. hmmmmmmm yummy recipe!!

I made the peach and raspberry tart, it took double the time to cook and in the end I had to leave it in the oven (turned off!) when I went to bed. This morning, the filling is still soft and uncooked, it tastes nice but the texture is gloopy and off putting and certainly not fluffy be any means. I’m really disappointed as it took ages to make. Where could I have gone wrong? My son reckons its because we used brown sugar, or could our fruit have been too wet? Anyone know?
I have just tried to look up the link for the instructions of how to make the raspberry tart and they have disappeared from the internet, is this because it comes out soggy? How strange.
